Recipe: Chicken noodle soup

Having a Sunday roast today? This recipe is perfect for using up left over chicken – and if you’re feeling really thrifty, you could make your own stock from the carcass too.

Serves 1


  • One portion of dried noodles
  • 1 tablespoon soy sauce
  • Garlic clove (crushed)
  • 2 spring onions (chopped)
  • Half a red chilli (optional)
  • Leftover chicken
  • 500ml chicken stock (homemade or from a cube)
  • Spinach
  • Oil


  1. Cook the noodles according to packet instructions and set aside
  2. Fry the garlic, spring onions and chilli (if using) in some oil
  3. After a few minutes, add the stock, soy sauce and chicken
  4. Once everything is heated through, add the noodles and spinach
