Who are we?
For me, lunch is all about trying to be healthy while avoiding eating a boring salad consisting of limp iceberg lettuce and little else. When it comes to lunch, I want something that is going to fill me up and not break the bank. I’d choose a homemade couscous and roasted veg type vibe over an over-priced supermarket salad anyday!
Lunch was always my least favourite meal of the day before I joined the Soggy Sandwich team. I used to think it interrupted my routine and was a waste of time. That was until I discovered what lunch really could be like. The options are endless, and if you just make that little bit of time in the morning or night before to prepare some salads, sandwiches and wraps, then lunch can soon become the best, and most important meal!
People say I’m obsessed with food, and to be honest I probably am. Before I’ve finished my breakfast I’ve already planned out what I’m having for lunch and dinner. But my favourite meal of the day? Well that has to be lunch – there’s just so many options you can have and it’s the most important meal because it’s what keeps you going for the rest of the day. I’m much better at working in the mornings than in the afternoons so I have to choose my lunch carefully to stop me going into a post-lunch slump at my desk. Being part of Soggy Sandwich means I can think about lunch constantly and call it “doing work” – perfect.
I used to be pretty lazy when it came to making packed lunches, in fact I often didn’t bother. AND THEN I realised the amount of money I was spending on expensive pre-made meals from the supermarket or in coffee shops every single day! I know I am not alone. That is why I’m excited to be a part of the Soggy Sandwich project – working towards making the lunch hour (AKA the best part of the day) healthy, fun and inexpensive. My favourite lunch time treat? Paninis! It’s all about those paninis – and I do love a cheeky carrot on the side, Bugs Bunny style.
